Traditional set of utensils for fondue, with bread, cheese, grapes

#1: Cheese Fondue

Ingredients:

1 clove garlic (halved)

1 cup white wine

1 tablespoon lemon juice

½ pound Emmental cheese (grated)

½ pound Gruyère cheese (grated)

1 tablespoon kirsch

1 tablespoon cornflour

Bread cubes

Fruit cubes

Diced vegetables

 

Directions:

1. Rub the inside of the ceramic fondue pot with the garlic. Then, discard the garlic.

2. Add the wine and lemon juice to a simmer over moderate heat.

3. Add the grated cheeses into the simmering liquid. Keep stirring the mixture gently until it is smooth. Then, stir in kirsch with cornflour.

4. Keep stirring. Do not let it boil or burn.

5. Serve with bread cubes, apple or pear cubes and diced vegetables such as broccoli, cauliflower, carrot for dipping by fondue prongs.

Organic Grilled Lamb Chops with Garlic and Lime

#2 Roasted Lamb with Garlic and Rosemary

Ingredients:

1 ½ kg leg of lamb

2 tablespoons fresh rosemary leaves (chopped)

3 cloves garlic (minced)

1 teaspoon sea salt

 

Directions:

1. Preheat oven to 450°.

2. Rub chopped rosemary and minced garlic on the leg of lamb surface. Place it on the roasting pan.

3. Bake at 450° for 1 hour and 15 minutes until the internal temperature of lamb is 140° (medium-rare) or 155° (medium).

4. Remove from the oven and sprinkle with sea salt.

5. Place the roasted lamb on a platter. Cover with aluminium foil tightly. Rest for 15 minutes. Then, slice for serving.

Warm Homemade Gingersnap Cookies topped with Sugar

#3: Gingerbread Cookies

Ingredients:

175g dark muscovado sugar

85g golden syrup

100g unsalted butter

350g plain flour

1 teaspoon bicarbonate of soda

1 tablespoon ground ginger

1 teaspoon ground cinnamon

1 egg (beaten)

Ready-made writing icing

 

Directions:

1. Add the sugar, golden syrup and butter into a saucepan with low heat until they are melted. Then, bubble for 2 minutes. Leave it to cool down for 10 minutes.

2. Add the flour, bicarbonate of soda, ground ginger and ground cinnamon into a big bowl. Then, pour the warm syrup mixture and the egg and stir all ingredients together. Gently knead the dough until smooth. Wrap it by film and refrigerate for over 30 minutes.

3. Take out the dough from the fridge and leave at room temperature until it is soft. Preheat the oven to 450°. Line baking trays with baking parchment.

4. Roll the dough to the thickness of around 5mm. And, cut out shapes with a floured cookie cutter.

5. Place the cookies onto the baking trays. Bake for 12 minutes. Then, leave to cool until cookies are firmed.

6. Decorate the cookies with ready-made writing icing.
